Consider this my exercise in Practical Demon Keeping. Petite Sirah the Monster.  Tannic as hell and so dark it will stain your soul!  From head-pruned hillsides of the west side of Paso. The goal is to take the monster and dress him up and make him presentable at dinner.  I try not to over-extract and find the balance between the fruit and tannin.  100% French Oak help soften the savage beast but we coax the darkness with a heavy toast on the wood.  Serve with grilled meats and other things you may find in the dark…
